“ZEITGEIST- 2021” – an online cookery competition organized by EPICURE CLUB, IIT – ROPAR was held on 23rd to 25th April, 2021. The motto of the competition was to provide an online platform for the budding chefs to showcase their hidden talent and creativity. There were 2 categories in the competition.

One was titled “STREET VAGANZA” in which the participant had to make and present a street food of any sort and another one was titled as “MISHTANNO”- in this category the participant had to make a dessert of any sort. The participants were asked to make a video of dish that they are preparing, speak out all the ingredients very clearly which they have used in the dish and all the steps and techniques to be clearly captured without any background music or transitions. The video entries were submitted by students 2 days prior to the final judging. Instagram platform was used for the competition.

Pavan Ganesh (final year student) has won the Gold in “STREET VAGANZA” category. His product was Molecular Papdi Chat which is an innovation of the famous street foods of India, Papdi chat. Molecular Gastronomy elements like Yogurt spheres, spaghetti of Tamarind chutney, Pomegranate caviars and Mint foam was used along with the classical khasta papdi and sev topping. Each papdi had all the elements presented on a bed of Mango jelly.

Yash Siwal (final year student) has won Silver for the same category. He presented Popcorn Bhel, for which he used unique salt and sand cooking technique to make the popcorn out of corn and millets. The bhel was made with traditional ingredients and very well presented with classical accompaniments like raw mango, mint chutney and tamarind chutney.

Anusha Joshi (final year student) won Gold for her dessert Jack N Chill in the category “MISHTANNO”. It’s a plated dessert with European elements dominated by native fruit flavours. She made a Jack Fruit savarin with Ice Apple jelly served along with jack fruit compote, raspberry reduction, mango curd and mint dust.

Anmol was given consolation prize. He prepared a Halwa Sushi, which was pan cakes filled with 4 different halwas (Pumpkin, beetroot, carrot and bottle guard) individually and rolled like Sushi and served along with pistachio rabdi. The panel of Judges Akanksha Khatri and Dr. Priyanka Biswas from Masterchef India were thoroughly impressed with products, their presentation and the elements of uniqueness and techniques that students used in their dishes. All in all it was yet another great show by the students and as usual Brand CAI strongly marked its presence in the social platform.
